Für mich klingt es logisch, wenn ich sage Wenn das Produkt Schuhe sind aber ich denke, dass sich das Verb auf das Wort Produkt bezieht und nicht auf Schuhe.

Ja, der Plural "gewinnt" in dem Fall immer.
